An amazing photographer from Montreal Quebec posted this recipe on her blog a few weeks ago. I have never had French Onion Soup so I decided to make it for my parents last weekend. I altered the recipe a bit after I translated it from French. It was the best soup I have ever had. Honestly, you have to make it. Thanks Catherine Giroux!
Here is the recipe I used:
French Onion Soup
SERVES 8 PEOPLE
- Place 1 TB spoon of butter and a splash of Olive Oil in a large pot and cook 4 Large White Onions until they begin to brown (10-12 minutes)
- Add 2-4 Cloves of chopped garlic, 2 TB of sugar, and a some Thyme. Continue to stir onions until brown
- Sprinkle in about a TB of flour. Add 120 ML of White Wine and 2 Liters of Beef Stock. Bring to a boil. REDUCE HEAT AND SIMMER GENTLY FOR 45 MINUTES
- Reduce heat and simmer the soup for 45 minutes. Occasionally stirring. When soup is almost done toast Whole Grain English Muffins and then break into small pieces.
- Fill soup bowls with a few pieces of the bread, add soup and enjoy. Top with parmesan cheese if desired.
