When it is freezing out, one of my ultimate favorite things to do is make and bake great food.
For the last several weeks I have been having an insanely passionate love affair with butternut squash.
Without a doubt, peeling a butternut squash can be a b*tch-and-a-half, BUT, in the end, it is always oh-so-worth-it.
Until I become “turned off” by it, I am going to openly continue to make incRENible squashy dinners.
Mushroom & Butternut Squash Lasagna is on the menu for tonight.
