Last night’s frigid temperatures called for an evening indoors with a warm bowl of soup, a large glass of wine, and a few episodes of Seinfeld.
Creamy Tomato Basil Soup
Ingredients:
- 2 Garlic Cloves, minced
- 1 tbsp olive oil
- 4 fresh tomatoes, chopped
- 2 cups Veggie Broth
- 1 can Tomato Paste
- 1/8 cup Fresh Thyme
- 1/4 cup Fresh Basil, chopped
- 3/4 cup Plain Nonfat Greek Yogurt
- 1 tsp Red Chili Pepper Flakes
- Sea Salt, Oregano, and Ground Black Pepper to taste
- 1/4 cup Freshly Grated Parmesan Cheese
Instructions:
In a medium sized pan over medium heat, add olive oil, onion, garlic, basil, and thyme sauté for a couple minutes. Put 1/2 of mixture into food processor.
Return to heat, add tomatoes and cook until tender, about 5 minutes. Remove from heat and place in food processor.
Pulse until mixture reaches a semi-chunky consistency. Add tomato paste, salt, pepper, and oregano.
Pour into a large pot over medium heat. Add veggie broth and greek yogurt. Cover, reduce heat to medium low, and let simmer about 20 minutes.
Garnish with parmesan cheese and more basil if desired. #yummo
