Welcoming the New Year with a Unique Dressing for our Quinoa! Last night we wanted to make something easy and quick because we both were starvin-marvin. So, we came up with a quick quinoa salad with homemade dressing from some random ingredients we had at home.
Balsamic Onion Dressing
INGREDIENTS
- 1 Yellow Onion (diced)
- 1 tbs Olive Oil
- 2 Garlic Cloves (minced)
- 2 tbs fresh Parsley (chopped)
- 1/2 tsp Sea Salt
- 1/2 tsp Black pepper
- 1/2 tsp Oregano
- 1/2 Cup Trader Joe’s Aioli Garlic Mustard Sauce
- Several Splashes of Trader Giotto’s Balsamic Vinaigrette
PREPARATION

Drizzle olive oil in a large skillet over medium-high heat. Add onions; sauté until soft, about 8 minutes. Add parsley, salt, pepper, oregano, garlic. Remove from heat and place in food processor.

Add Trader Joe’s Aioli Garlic Mustard Sauce and a few splashes of Trader Giotto’s Balsamic Vinaigrette to food processor.
- Blend for 3-5 minutes or until thoroughly mixed.

This dressing was all Caleb’s idea to put atop our quinoa. We added sliced cherry tomatoes, peas and topped with feta cheese. We also used it as a dipping sauce for our french baguette.
I am so excited for all that 2014 has to offer. I am looking forward to continuing to experiment in the kitchen with Caleb and take beautiful pictures of our creations.
