Asian Quinoa Salad

Salad:

  • 1 cup cooked quinoa
  • 1 8 oz bag of chopped red cabbage
  • 1 cup shelled and cooked edamame ( I bought the frozen kind, microwaved them for 5 minutes, and then pinched them so the beans popped out)
  • 1 red bell pepper
  • 4 shredded carrots
  • 1 diced cucumber

Dressing:

  • 1/2 cup lite soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoon red wine vinegar 
  • 2 tablespoons of apple cider vinegar
  • 1/4 cup chopped cilantro
  • some grated ginger
  • red pepper flakes

 

Caprese Corn Salad

 

  • 51 bag frozen corn
  • 1/4 cup olive oil
  • 3 Tbsp red wine vinegar
  • ground black pepper
  • sea salt
  • 2 cups sun gold tomatoes
  • 1/4 cups diced chives
  • 8 ounces fresh mozzarella balls, halved
  • 1 cup of fresh basil leaves, thinly sliced
