Asian Quinoa Salad
Salad:
- 1 cup cooked quinoa
- 1 8 oz bag of chopped red cabbage
- 1 cup shelled and cooked edamame ( I bought the frozen kind, microwaved them for 5 minutes, and then pinched them so the beans popped out)
- 1 red bell pepper
- 4 shredded carrots
- 1 diced cucumber
Dressing:
- 1/2 cup lite soy sauce
- 1 tablespoon sesame oil
- 2 tablespoon red wine vinegar
- 2 tablespoons of apple cider vinegar
- 1/4 cup chopped cilantro
- some grated ginger
- red pepper flakes
Caprese Corn Salad
- 51 bag frozen corn
- 1/4 cup olive oil
- 3 Tbsp red wine vinegar
- ground black pepper
- sea salt
- 2 cups sun gold tomatoes
- 1/4 cups diced chives
- 8 ounces fresh mozzarella balls, halved
- 1 cup of fresh basil leaves, thinly sliced
